Yes, naturally occurring nitrates in sea salt are not a problem-unless you plan on not eating any salt? As far as I can tell, that would be the only way to avoid it. The key phrase is "naturally occurring."

Courtney, I have done egg beaters in the past, and have even done 1/2 eggs plus 1/2 egg beaters, or 1/2 egg whites plus 1/2 eggs. Just substitute 1/4 cup egg beaters per egg.

I'm curious, Where do you find nitrate free breakfast meats? Farmers markets? I find many that say "No Nitrites or Nitrates Added", and then have a little asterisk saying something like "Except for those naturally occurring in celery powder and sea salt" (apparently they have to label it like this due to some federal regulation). But as far as I can tell the naturally occurring ones are no better in quality or quantity than synthetic sodium nitrate.
